Weekend brunch: Baked eggs in avocado
•3 avocados, halved and seeded•6 large eggs•Kosher salt and freshly ground black pepper, to taste•2 tbsp. chopped fresh chivesPreheat your oven to 425 degrees. With a spoon, scoop out two tablespoons of flesh from the center of each avocado. Crack an egg into each center.Season each avocado with salt and pepper. Bake each for 15 to 20 minutes. Top with chopped chives, hot sauce and crumbled bacon.
