1 medium potato, sliced into thin rounds4 tablespoons olive oil, dividedsalt and pepper to taste2 salmon fillets1 large orange, halved1 lemon, halvedShape foil into packets. Layer in the thinly sliced potato. Drizzle with oil, add salt and pepper. Place the salmon on top. Drizzle with more oil. Juice the orange and lemon equally over the salmon fillets. Top with remaining salt and pepper.Seal the packets. Bake at 400 degrees for 25 to 30 minutes or until done. Top with some freshly chopped dill or parsley.
