12 oz. elbow macaroni3 cups water2 cups milk1 cup cauliflower florets2 cups shredded white cheddar cheese, divided1/2 cup sour cream1/4 cup olive oilSalt and pepperCook the macaroni, water and milk in a skillet on medium-high until the pasta is done, about eight to 10 minutes.Puree the cauliflower, 1 cup of cheese, sour cream, oil, salt and pepper in a food processor until creamy, about five minutes.Top with remaining cheese and stir.
