1/3 cup honey1/4 cup soy sauce1 tablespoon minced garlic1 teaspoon minced fresh ginger1 lb medium uncooked shrimp, peeled and deveined2 teaspoons olive oilChopped scallionsWhisk the honey, soy sauce, garlic and ginger together. Marinate shrimp in half of the marinade for one hour.Heat the olive oil in a skillet on medium-high. Cook the shrimp for one minute, until cooked through.Add the extra marinade. Cook for another minute.Serve over rice with veggies on the side. Top with scallions.
